
Here's this week's menu. I usually try to incorporate at least one slow cooker meal (to make my cooking easier), and one seafood meal (to try to eat healthier) and one vegetarian meal a week (sometimes healthier and usually easier on the budget).
Monday: Tomato soup, cheese quesadillas, fruit.
Tuesday: Freezer Round Up. Pick a quick meal from the freezer. (It's getting a little full.) Veggies and dip. Fruit.
Wednesday: Clean Out The Freezer Slow Cooker Minestrone Soup.
Thursday: Salmon muffins, sweet potato fries, corn or broccoli. I'll use the linked recipe, but will bake these in a muffin pan. It will make nice individual servings, and it will be crispier.
Friday: Pizza and salad.
Saturday: Last CSA. We'll see what's in our CSA and plan from that.
Sunday: TBA. Leftovers.
