Menu Monday



I'm trying to use the vegetables we received in our last CSA. Also, while visiting my mom in Georgia I went to Jaemore Farmer's Market and purchased one half bushel of variety apples, so you'll see lots of vegetables and apples on the menu this week and probably next.

Monday: Garlicky White Bean Soup with Kale. I'll make this in the slow cooker. Home made apple sauce.

Tuesday: Eggplant Parmesan and green salad. I'll use jar sauce instead of tomato paste with the recipe.

Wednesday: Leftovers.

Thursday: Butternut squash soup. Rolls and fruit. I'll use the linked recipe as a starting point, decrease the chicken stock and add cream and apple as suggested.

Friday: Hashbrown casserole, slow cooker apples, corn. For the hashbrowns, I'll substitute cream of mushroom soup and omit the topping.

Saturday: Simple supper. Leftovers and/or grilled cheese sandwiches and tomato soup.

Sunday: TBA
